
For 200lt. Sugar wash
- 60kg Sugar.200g DADY Yeast.
- 50g DAP Nutrient (30g, 20g staggered addition).
- 50g Potassium Carbonate pre-addition. 50g additional after 2 days.
Method:
- 50lt hot water.
Dilute sugar, add additional 25lt hot water. - Top up with cold water.
- Aerate with drill paint stirrer.
- Add DAP & Ph stabilizer
- Take SG reading, with Refractometer & SG meter, record & check potential alcohol.
- Check mash temp, around 27-30 degC , add yeast.
NB: Keep mash at 26degC for 5 days. Check mash PH, after 3 days, if below PH4 , add additional 20g Potassium Carbonate. Check SG , every 2 days & record SG reading.
When mash SG reaches 1.000 or lower, the fermentation is done. Record this final gravity reading.
Degas the fermentation, using a drill paint stirrer, then close up the fermentation drum lid & leave in a cold place, for 2 to 3 for the yeast to settle to the bottom of the fermentation drum. Once the fermentation liquid is clear, it is ready to distill.
